Spinach & ricotta cannelloni

This meal you can turn into an activity to keep toddlers happily occupied. Let them stir the filling, peel the onion or wash the spinach.


375 g fresh lasagne sheets

70 g grated mozzarella chesse

50 g finely grated parmesan cheese


1 tablespoon olive oil
1 small onion, finely chopped

2 garlic cloves, crushed

2 bunches English spinach

300 g fresh ricotta

1 tablespoon oregano


1 tablespoon olive oil

1 small brown onion, finely chopped

2 garlic cloves, crushed

400 g tin peeled whole tomatoes

125 ml tomato – based pasta sauce

1 teaspoon dried oregano

2 teaspoon Dijon mustard

1 tablespoon balsamic vinegar

1 teaspoon sugar

Preparation time 45 minutes

Cooking time 1 hr

Serves 4


1 Preheat the oven to 180 C

2 To make filling, heat the oil in a pan and add the onion and garlic. Cook for 3-5 minutes, or until the onion soften. Trim and finely shred the spinach, add it to the pan and cook for 5 minutes, or until wilted and the moisture has evaporated. Remove from the heat. Once cooled, combine with ricotta and oregano in a food processor or blender. Process until smooth and season.

3 To make the sauce, heat the oil in a pan, add the onion and garlic and cook over low heat for 8-10 minutes. Add the rest of the sauce ingredients. Bring to the boil, then reduce the heat and simmer for 10-15 minutes, or until the sauce thickens.

4 Cut the lasagne sheets into twelve cm squares. Lightly grease a 2 litre ovenproof dish. Spread one – third of the sauce over the base, then spoon 1 ½ tablespoon of the spinach mixture onto one side each square of lasagne, leaving a 5 mm border. Roll up the pasta to cover the filling and place in the dish seam side down. Repeat with all the sheets, spacing the cannelloni evenly in the dish. Spoon over the remaining sauce and sprinkle with the cheeses Bake for 30 – 35 minutes or until the cheese is bubbling and golden. Allow to stand for 5 minutes before serving.
